Ingredients
  

  • 8 ears corn
  • 4 fresh limes
  • 2 sticks unsalted butter slightly softened
  • 8 cloves garlic peeled and coarsely chopped
  • ¼ habanero pepper seeded
  • 5 tbsp fresh chives chopped
  • ½ cup cotija cheese grated
  • salt to taste
  • pepper to taste

Instructions
 

  • Peel back the husks of the corn without removing them. Remove the silks and re-cover the corn with the husk. Soak in large bowl of cold water for 30 minutes.
    Preheat grill to medium while corn is soaking.
  • Combine butter, garlic, habanero, and 3 tbsp chives in a food processor and process until smooth. Season with salt and pepper. Set aside until ready to use.
    Alternatively, chop ingredients finely by hand and mix with softened butter in a small bowl.
  • After soaking 30 minutes, remove corn from water and shake off excess. Place the corn on the grill, close the cover and grill for 15 to 20 minutes.
  • Unwrap corn and brush with the garlic butter. Sprinkle with the cotija cheese and squeeze with lime. Sprinkle with remaining 2 tbsp chopped chives, to garnish.

Notes

Don’t have chives? You can substitute green onion, cilantro, or even parsley.
You can optionally peel back the husks for the last 5 minutes to help give the corn some nice char. Just be careful because they will be hot!
